Grafting is born from the heterogeneity of our breeding, since every year the soil and climate conditions are different. Based on this definition, we decided to create a wine based on the best behavior of the grape variety during the wine-growing year. Therefore, we take the liberty of choosing each year the grape variety that best reflects our philosophy – as is the case with Jaen.
