The grapes are harvested by hand, only in the morning to preserve maximum nighttime freshness and maintain maximum quality.

When they arrive at the winery, they undergo rigorous screening, undergoing gentle pressing, followed by spontaneous fermentation in used and new 500L and 225L French oak barrels.

After fermentation, we chose to age for 10 months in contact with fine lees, without battonage.
