Red Wine 2022, 75cl
The grapes for this wine come from a group of plots that, due to their characteristics (soil, sun exposure, etc.) give rise to elegant and fresh reds. The grapes from both varieties fermented without de-stemming for around a week in an open press. Over this time, pumping over was carried out with wooden masses, several times a day, until the wine reached the desired intensity. Finally, the wine finished fermentation in used Burgundy (French oak) barrels where it aged. It then passed into a small wooden barrel where it remained until bottling, without any fining or filtering.
