Quinta das Bágeiras Colheira Red 2021, 75cl
The grapes for this wine are taken from relatively new vineyards (more than 15 years old) but, often, only in the third harvest of these vineyards, the first being intended for the production of brandy and the second for the production of sparkling rosé. They are fermented for 5 to 8 days in an open press without de-stemming. Afterwards, reassembly is carried out with wooden masses, several times a day, until they reach the correct intensity. The wine then finishes fermenting in old wooden barrels. While it rests, it is cleaned and aged in the same barrels for around 18 months. It is bottled without any fining or filtering. All these processes are done manually.
