It is a wine made from grapes from vineyards that are around 15 years old, and production has been drastically reduced.

It was vinified with an open spout, with the must placed in small 1m³ decanters where it remained for 24 to 36 hours to decant through natural precipitation.

At the end of this process, it fermented in used French oak barrels that we acquired in the Burgundy region.

A light bâtonnage was made and it aged in the barrels until it became completely clear, naturally.

Bottled without filtering or fining.
